Recipe: Savory Dutch Baby Skillet Cake with Ham, Cheddar Cheese, Sage and Apples

SERVES:
4-6
INGREDIENTS:
2 apples, cored and thinly sliced
1-2 Tbs butter (plus 1 Tbs for pancake)
3 large eggs
3/4 cup milk
3/4 cup all-purpose flour
pinch salt
1/2 cup grated cheddar cheese
1/2 cup diced smoked ham
1 Tbs finely chopped fresh sage
maple syrup for garnish
PROCEDURE:
Preheat the oven to 425 degrees.
Core and thinly slice two apples and saute them in 1 - 2 Tbs butter in a 12-inch cast iron skillet on medium to medium low heat.
While you're keeping your eye on that, make the batter by combining 3 large eggs with 3/4 cup milk and 3/4 cup all-purpose flour, add a pinch of salt and whisk it up.
Then add 1/2 cup grated cheddar cheese, 1/2 cup diced smoked ham and 1 Tbs finely chopped fresh sage to the batter and fold those in.
Take the apples out of the skillet once they have softened up, and then add another Tbs of butter to the skillet and let that melt.
Turn the heat to medium high underneath the skillet and, once the butter has melted, add the batter to the skillet and spread that around and then place the skillet onto the center rack of the preheated oven.
That'll take just about 20 minutes to bake and you'll want to use a dry towel to take the hot skillet out of the oven.
Then sprinkle the sliced cooked apples over the top of that, carefully cut it into wedges and serve it up with a little maple syrup over the top.
HINTS:
Leave the apples and maple syrup out and make it a totally savory experience.
